This Blanc de Noir might be one of the most serious efforts I have tasted to date. It is pale and complex beyond my own expectation of the fruit. The nose hints subtle floral notes of elderflower (a pyrazine) that quickly become consumed by high concentrations of thiols such as passionfruit, grapefruit and gooseberries (yeast derived) before leaving the nose with hints of fresh citrus. 

 

On the palate you are exposed to serious grip and spice, for which we need to credit the variety being Cabernet Franc, as well as our excellent cool climate terroir. Incredibly small tannins provide a racy texture. It is bone dry with an incredibly fresh natural acidity providing a long, clean, finish.
